When I married my ex-husband, one of the first recipes his mom gave me was this Marshmallow crème fudge recipe.

So even though I divorced her son, I still got to keep the recipe.  And it’s still as good as it always was.

So for today’s Christmas song please click here .  I’m not even gonna try to explain this one.  It just seemed a fitting video for a dysfunctional family such as ours. . .

but all in good fun!  It made me smile anyway.

So . . . the fudge . . .

This fudge is soooo creamy and amazing.  It’s hard to imagine it’s this easy to make!

It starts with 3 Tbsp butter, 3/4 cup evaporated milk, 1 3/4 cups sugar. and 1/2 tsp salt.

Mix them together in a saucepan . . .

Bring to a boil and cook for 4 – 5 minutes.  I never know why there has to be ranges like this.  So I always just always shoot for the middle ground 4 1/2 minutes.

While that’s cooking, and in between stirring, I line an 8×8 inch baking dish with foil . . .

and measure out 2 cups marshmallows, 1 1/4 cups semi sweet chocolate chips, and have the vanilla handy because once the 4 1/2 minutes is up, everything moves very quickly.  Or you can be all organized and have that done before you even start . . . I don’t usually think that far ahead.

As soon as the cooking time is up, remove the pan from the heat and add the marshmallows, chocolate chips, and 1 tsp vanilla.

Then quickly stir till it’s all melted and gooey.

Then pour it into the foil lined dish and let it cool completely.  At this point, I must disclose that the original recipe says to add 1/2 cup nuts.  I stopped adding nuts just because my family prefers to have it without.  I like it either way but I aim to please.

I usually set it out in my enclosed breezeway to cool, which I close off in the wintertime because it isn’t heated out there.

Once it’s in the dish . . . there’s the spoon . . . and the spoon must be dealt with, and it belongs to me!  My reward for creating such incredible lusciousness!

By the time the fudge has cooled, I have usually recovered from my sugar coma . . .

Then the foil gets peeled off and I it cut into squares.

and tuck it away for safe keeping till Christmas!

Marshmallow Crème Fudge:

  • 3 Tbsp butter
  • 3/4 cup evaporated milk
  • 1 3/4 cups white sugar
  • 1/2 tsp salt
  • 2 cups miniature marshmallows
  • 1 1/4 cup semi sweet chocolate chips
  • 1 tsp vanilla

Place butter, milk, sugar, and salt in a saucepan over medium heat and bring to a boil.  Cook 4-5 minutes (no longer).

Remove from heat and stir in marshmallows, chocolate chips, and vanilla.

Stir till it’s all melted together.  Pour into a foil lined 8×8 baked dish.

Let it cool completely and cut into squares.
