If you’re a fan of essential oils, it’s very likely that one of the first oils you purchased was Lemon Oil (Citrus Limon). This oil has a multitude of uses but for todays purposes, Lemon Bark is on the Christmas treat menu.
Just be sure the lemon oil you have is approved to be taken internally. I know there are several great companies out there but I use and love doTERRA Essential Oil products.
I always have leftover almond bark from Christmas treat making. This is how I used it up this year and it only took about 5 or 10 minutes!
Christmas Lemon Bark
I had half a pound of almond bark,
which I melted in the microwave as instructed on the package. I just do about 30 seconds at a time stirring between each microwave session. You could also use a double boiler, or put it in the conventional oven at a low setting. The microwave is faster though.
Add the zest of one lemon,
and 4 drops of Lemon Oil.
Stir together and spread out on a cookie sheet covered with waxed paper.
Put the cookie sheet in a cool area till it hardens. I use my enclosed breezeway since it isn’t heated, it’s pretty cool out there this time of year.
Then break the hardened Lemon Bark into pieces. Store in a Christmas tin or Tupperware – like container.
The mild lemon flavor gives your taste buds a break from the usual peppermint bark most people think of this time of year.
